Participants of NFU’s Beginning Farmer Institute recently toured America’s leading farmer-owned cooperative and inspected a number of Minnesota’s most innovative farms. Meeting for the second time in as many months, the BFI participants also learned more about farm ownership options and how to transition operations from one generation to the next.

The event, sponsored in part by Farm Credit, United Soybean Board, Sustainable Agriculture Research and Education, and the NFU Foundation, was held Nov. 10-13 in the Twin Cities.

The first stop on their farm tour day was the year-round St. Paul Farmers Market. This market has been in the same area for more than 150 years.

German Potato Pancakes

Ingredients:

5 large yellow potatoes

2 medium onions

2 tsp. lemon juice

1 large egg, lightly beaten

Salt and black pepper to taste

Vegetable oil for frying

 
Preparation:

Peel and grate potatoes and onions separately.  Mix grated potatoes with lemon juice and drain liquid off through a sieve.  Now mix potatoes and onions together and add egg.  Season with salt and pepper to taste.  In a large skillet, heat 1/8-inch of oil over medium heat until hot.  Place about 1/4 cup of batter in heated pan, spreading batter to make a flat pancake.  Fry golden brown on both sides.  May be able to fry three pancakes simultaneously, depending on the size of the skillet.  Drain pancakes on a plate lined with paper towels.  Continue as above until all of the batter is used, adding oil as needed.  Serve hot with applesauce.
